" CULINARY SPECIALTIES: tea specialty: signature sultana scones UNIQUE ASPECTS: owner pascal vignau's bio: pascal vignau is the chef / owner of savory, a contemporary restaurant located in the san diego coastal town of encinitas, California. pascal vignau began his culinary career in paris in 1976 as a cook at bistro 121. From there he moved to the world famous negresco hotel in Nice, France followed by a stint at the hermitage hotel in monte carlo. His first position in the united states was at the adolphus hotel in dallas, texas, where he was chef at the renowned french room from 1981 - 1986. His career at the four seasons began in 1986 at the ritz carlton hotel in chicago as executive sous chef. In 1988, pascal vignau was appointed executive chef of the four seasons hotel in beverly hills. after a very successful four years, he was sent to jakarta, Indonesia where he managed the new four seasons hotel. after a very successful three year tenure, he was once again assigned to open a new four seasons hotel, this time in carlsbad, california. As the manager of the Four Seasons Resort, aviara, Chef Pascal Vignau once again proved his expertise as he developed the hotel's food concepts for all its restaurants, and trained 65 kitchen staff members. while at aviara, the hotel was awarded the aaa five diamond award, the only hotel in san diego holding this rating! With the opening of savory, pascal vignau is realizing a life long goal, to own and operate his own restaurant. for this talented chef, the restaurant will showcase his talents as a chef and leader, but most of all, it will reflect his love of people getting together over good food, purchased at a good value, and eaten in surroundings that feel like home.
